    List of Ingredients


    • 1 kg chicken thighs
    • 250g can pineapple rings
    • 1 whole clove
    • 3 tbs seasoned flour
    • 3 oranges
    • 1 cinnamon stick
    • 2 tbs oil
    • 1/2 tbs soy sauce
    • 1 tbs cornflour
    • 1 avocado, peeled and sliced


    Instructions


    1. Wash and trim the thighs, pat dry with paper towels. Coat with seasoned flour and shake off excess.
    2. Heat the oil in a large heavy based saucepan. Add the thighs and brown well on all sides.
    3. Drain fat from pan.
    4. Zest 1 orange, then squeeze the juice from it. Add juice and zest to chicken. Add pineapple juice and half the canned juice.
    5. Add soy sauce and spices. Cover and simmer 40-50 minutes until thighs are cooked.
    6. Segment 2 remaining oranges over a bowl to catch the juice.
    7. Remove thighs with a slotted spoon, to a serving dish. Arrange pineapple rings around them.
    8. Discard clove and cinnamon. Blend cornflour with a little orange juice, stir into the pan juices and stir over heat until the sauce boils and thickens.
    9. Stir in orange segments. Spoon sauce over chicken thighs, garnish with avocado slices and serve with boiled rice.
