List of Ingredients
- 1 kg chicken thighs
- 250g can pineapple rings
- 1 whole clove
- 3 tbs seasoned flour
- 3 oranges
- 1 cinnamon stick
- 2 tbs oil
- 1/2 tbs soy sauce
- 1 tbs cornflour
- 1 avocado, peeled and sliced
Instructions
- Wash and trim the thighs, pat dry with paper towels. Coat with seasoned flour and shake off excess.
- Heat the oil in a large heavy based saucepan. Add the thighs and brown well on all sides.
- Drain fat from pan.
- Zest 1 orange, then squeeze the juice from it. Add juice and zest to chicken. Add pineapple juice and half the canned juice.
- Add soy sauce and spices. Cover and simmer 40-50 minutes until thighs are cooked.
- Segment 2 remaining oranges over a bowl to catch the juice.
- Remove thighs with a slotted spoon, to a serving dish. Arrange pineapple rings around them.
- Discard clove and cinnamon. Blend cornflour with a little orange juice, stir into the pan juices and stir over heat until the sauce boils and thickens.
- Stir in orange segments. Spoon sauce over chicken thighs, garnish with avocado slices and serve with boiled rice.
