Spicy Mince

Recipe Introduction
An easy way with what I had in the house. Vary the vegetables (corn, carrots, celery, mushroom) as required
serves 4-6 leftovers can be frozen
If not making for small people add more spice
List of Ingredients
500g mince (I used kangaroo)
1 onion, chopped
2 cloves garlic, minced
1 zucchini, sliced
1/4 red capsicum, chopped
500ml tomato sauce or puree (not the ketchup kind)or substitute tomato paste
1 tin baked beans
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp paprika
salt and pepper if required
cooking oil (I use olive)Recipe
1. Fry onion and garlic. Add zucchini and capsicum and let soften.
2. Add mince and brown it adding spices and stirring often.
3. Add in tomato puree and if more liquid needed water (or stock or wine). Let it all cook together.
4. Add beans and cook 3 minutes until heated well. SServe over rice (brown is good) or rolled up in tortillas with a tiny sprinkle of cheese.
