    Tasty Tuna Baked Potatoes

    serves 2, double it for more people. It's an ideal lunch


    List of Ingredients


    • 2 large potatoes
    • 85g oven dried tomato and basil tuna (or any you prefer)
    • 1/4 cup sour cream
    • 2 tbs parmesan grated
    • 1/2 cup grated tasty cheese
    • salt and pepper
    • fresh basil or parsley leaves


    Instructions


    1. Pierce each potato several times with fork. Place on oven tray and bake at 200C for 1 hour or until tender.
    2. Cut in 1/2 lengthways. Scoop out flesh (retain skin) and mash until smooth.
    3. Mix in tuna, cheeses and cream. Season with salt and pepper. Fill skins with mixture and top with extra cheese.
    4. Bake 200C for 2-3 minutes until golden brown. Garnish with herbs. Serve with salad.
