Tasty Tuna Baked Potatoes

List of Ingredients
- 2 large potatoes
- 85g oven dried tomato and basil tuna (or any you prefer)
- 1/4 cup sour cream
- 2 tbs parmesan grated
- 1/2 cup grated tasty cheese
- salt and pepper
- fresh basil or parsley leaves
Instructions
- Pierce each potato several times with fork. Place on oven tray and bake at 200C for 1 hour or until tender.
- Cut in 1/2 lengthways. Scoop out flesh (retain skin) and mash until smooth.
- Mix in tuna, cheeses and cream. Season with salt and pepper. Fill skins with mixture and top with extra cheese.
- Bake 200C for 2-3 minutes until golden brown. Garnish with herbs. Serve with salad.
