Tomato and Cheese Topped Schnitzel

for extra fussy kids use tomato puree or pasta sauce instead of fresh tomato. Possible variations on this recipe are endless!

List of Ingredients
- 50g butter
- 2 tbs oil
- 4 crumbed veal or chicken schnitzels (if u lazy like me buy from butcher)
- 2 tomatoes sliced
- 4 slices mozzarella cheese (yes u can use grated)
- sprinkle of dried herbs (optional)
Instructions
- Heat butter and oil in frypan. Pan fry schnitzel on med-low heat on both sides until cooked through (rare is bad with schnitzel- esp if you didn't make it yourself)
- Top with tomato (herbs) and cheese. Grill until cheese has melted.
Final Comments
serve with mashed pumpkin, mashed potatoes, broccoli and beans. If desired add grated cheddar cheese to the mashed veg.
