    Recipe Introduction


    serves 4 with possible leftovers that are good for school lunchboxes. For vegetarians substitute a second can of beans or lentils for the tuna.


    List of Ingredients


    • 1 small onion, grated
    • 2 cloves garlic, finely chopped
    • 1 fresh lime leaf (optional) shredded
    • 2 tbs mild curry paste (or use red)
    • 2 tbs fish sauce (or use oyster)
    • 1 tsp white sugar
    • 3/4 cup frozen corn (or peas or snake beans)
    • 1 egg
    • 1 cup breadcrumbs
    • cooking oil
    • bread rolls, cucumber and coleslaw to serve
    • 1 tin tuna (or any fish) - 425g
    • 1 tin butter beans


    Instructions


    1. Drain and mash butter beans and garlic.
    2. Drain tuna and add. Add drained corn, onion, limeleaf, sauce, paste, sugar and egg.
    3. Pour breadcrumbs onto a plate and shape patties with breadcrumbs covering them. Place in fridge for 15 min or more.
    4. fir up bbq or frying pan and cook patties about 3-4 minutes per side.
    5. Serve on split buns with coleslaw and cucumber (or mint sauce, aioli with pomegranite or anything u like)


    Final Comments


    My sister ate these on an apple scroll (weird huh?) I made a lemony coleslaw not a mayonnaise one (see my recipes if you like) a Vietnamese/asian coleslaw might have been even better
