Warm Mushroom and Beef Salad

List of Ingredients
- 400g beef sirloin steak
- 1/4 cup olive oil
- cracked black pepper
- 300g cup mushrooms, thickly sliced
- 2 tbs roughly chopped rosemary leaves
- 300g green beans washed, topped and tailed
- 2 tsp balsamic vinegar
- 2 tsp honey
Instructions
- Lightly brush beef with 1 tsp olive oil. Sprinkle both sides with pepper.
- Heat 1 tsp oil in frypan on med-high heat. Add beef and cook 3-4 mins each side (for medium rare).
- Place onto a plate, cover loosely with foil. Stand 10 mins then cut beef into 1cm thick slices.
- Add mushrooms and rosemary to pan juices. Cook, stirring frequently 2-3 minutes or until mushrooms are soft.
- Place beans in freezer bag, twist bag to secure. Cook in microwave 2 min on high or until just tender. (I would prob just blanch in simmering water)
- Place beans on serving plates. Arrange mushrooms and sliced beef on top. Whisk remaining oil with vinegar and honey and drizzle over.
- Serve immediately. Prob Ok cold as leftovers with some bread
