Herbed Fish and White Wine Casserole

List of Ingredients
- 1 kg white fish fillets of choice
- 425g crushed tomatoes
- 1 sliced celery stalk
- 2 sliced white onions
- 1 slivered clove garlic (or more)
- 3/4 cup white wine
- 1 tbs fresh basil, chopped
- pepper
- black olives (optional)
- fresh basil or parsely to garnish
Instructions
- Place fish into large, shallow saucepan. Add tomatoes, celery, onions and garlic.
- Turn on heat and mix ingredients lightly (dont break fish) adding in wine, basil and pepper to taste.
- Cover and simmer gentley 20-30 minutes until fish flakes when tested with fork.
- Add black olives in the last few minutes of cooking time.
- Serve garnished with fresh herbs (prob good with mashed potatoes or brown rice)
