    Herbed Fish and White Wine Casserole

    List of Ingredients


    • 1 kg white fish fillets of choice
    • 425g crushed tomatoes
    • 1 sliced celery stalk
    • 2 sliced white onions
    • 1 slivered clove garlic (or more)
    • 3/4 cup white wine
    • 1 tbs fresh basil, chopped
    • pepper
    • black olives (optional)
    • fresh basil or parsely to garnish


    Instructions


    1. Place fish into large, shallow saucepan. Add tomatoes, celery, onions and garlic.
    2. Turn on heat and mix ingredients lightly (dont break fish) adding in wine, basil and pepper to taste.
    3. Cover and simmer gentley 20-30 minutes until fish flakes when tested with fork.
    4. Add black olives in the last few minutes of cooking time.
    5. Serve garnished with fresh herbs (prob good with mashed potatoes or brown rice)
