    Island Style Marinated Fish

    Even though there is no cooking over heat the acid cooks the fish and it is nice this way.
    Prep time 2 1/2 hours.
    Serves 4


    List of Ingredients


    • 1kg firm white fish or atlantic salmon (the fresher the better)
    • 1 1/2 cup coconut cream
    • 1 red chilli deseeded and finely chopped
    • 1 tomato sliced
    • chopped dill or chives
    • 2 cups lime juice (or lemon)
    • 1 tsp salt
    • 1/3 cup finely chopped red onion
    • 1 carrot julienned


    Instructions


    1. Slice fish into 1/2 inch cubes. Marinate fully covered in lime juice 2 hours or until flesh turns white.
    2. Mix coconut cream with onion, chilli and salt. Pour over fish. Divide onto 4 plates and garnish with tomato, carrot and dill or chives.
