    serves 4. Any combination of herbs can be used in this recipe.


    List of Ingredients


    • 2 cups coarsely chopped continental parsely
    • 2 cloves garlic, crushed
    • 1/2 cup olive oil
    • 4 boneless white fish fillets
    • 1/4 cup grated parmesan cheese
    • potato wedges and sugar snap peas to serve
    • slicved lemon to garnish


    Instructions


    1. Blend or process parsely, garlic and oil until smooth.
    2. Make 3 shallow diagonal cuts, about 2cm apart on one side of each fillet. Place fish on greased oven tray.
    3. Spread half the parsley mixture over fillets, sprinkle with cheese.
    4. Cook under hot grill for about 4 minutes or until cooked through.
    5. Serve fish with remaining parsely mixture, potato wedges and sugar snap peas. Garnish with sliced lemon
