    mexican food out of a pack is very easy, probably real mexicans wouldn't eat it but it tends to be a family pleaser. Tacos can be made very healthy with a huge selection of salads to add to them. Here is a 7 serves of veg a day version of burritos.

    List of Ingredients




    1 1/2 red onion (sliced)
    1/3 green capsicum (sliced- can add more)
    250g steak (cut into chunks or slices
    1/2 cup diced zucchini (can use mushrooms instead)
    1/2-1 cup frozen veg (carrot, beans, cauliflower, broccoli, corn or a mix of several of them)
    3 tbsp oil
    1 packet burrito mix
    1 tomato
    handful or rocket (maybe 100g or more-can use lettuce or alfalfa instead)
    4 tortillas
    salsa (buy a jar- leftovers good on chips, baked potatoes etc)

    Recipe



    1. Heat oil and saute (cook) onion and capsicum until soft. Add meat and stirfry until brown. Add zucchini, 1 cup boiling water (from kettle) and frozen veg.

    2. Mix in burrito mix and cook stirring until thickens

    3. On each tortilla put a few tablespoons meat and veg mix, add some diced tomato, rocket, salsa, fold up and enjoy

    NB-You can add beans from a tin (one of my kids asked for no beans this time), cucumber instead of tomato, grated cheese or some sour cream to your burrito. If you have a lot of people to feed you can make the meat and vegie mix go further by adding rice to the burritos. A squeeze of lime and fresh coriander are very very good additions too
