Fish Fingers with Vegies

serves 4 (make less for one or two)
This is a cheap, easy, low carb meal but if u are the sort of person that does not feel full without carbs (ie a normal active person) I recommend serving it with bread or some freezer section chips or wedges.
List of Ingredients
- 375g packet fish fingers (freezer section)
- 500g frozen cauliflower and broccoli mix (you may use different veg if you want)
- 400g frozen peas (or vegies you want)
- 1 lemon
- 120g tartare sauce
- salt and pepper to taste
Instructions
- Bake fish fingers on baking tray 15 minutes (preheat oven first)
- Boil a pot of (salted) water. Add vegies to the boiling water, reduce heat and simmer (cook slowly) 2 minutes.
- Drain out the water. Season with salt and pepper. Serve fish fingers with the vegies, a wedge of lemon and a spoonful of sauce.
Final Comments
If you are cooking vegies from fresh they may need a few minutes more cooking time (but not too much). You may also use those microwave packets of veg which I think are bad for the environment but sure are quick.
