    Of course most people would add grated cheese (or even if lazy thin slices of cheese melted over the top. I don't...but feel free to.

    serves 1-2


    List of Ingredients


    • 1 large pita bread (wholemeal is nice)
    • 2 tbsp tomato paste
    • vegies- finely chopped onion, mushroom, capsicum, tomato, pineapple (optional) precooked slices potato, sliced zucchini, 6 olives
    • dried herbs, salt and pepper (optional)


    Instructions


    1. Spread tomato paste over bread. Sprinkle with herbs if using. Add all ingredients. Spread some additional paste over the toppings (or add the cheese here)
    2. Bake 10-15 minutes


    Final Comments


    variation- if you want a non-vegetarian option add some cooked chicken, prawn, scallop, crab or octopus together with a small amount of anchovies to some of the vegetables
