Of course most people would add grated cheese (or even if lazy thin slices of cheese melted over the top. I don't...but feel free to.
serves 1-2
List of Ingredients
- 1 large pita bread (wholemeal is nice)
- 2 tbsp tomato paste
- vegies- finely chopped onion, mushroom, capsicum, tomato, pineapple (optional) precooked slices potato, sliced zucchini, 6 olives
- dried herbs, salt and pepper (optional)
Instructions
- Spread tomato paste over bread. Sprinkle with herbs if using. Add all ingredients. Spread some additional paste over the toppings (or add the cheese here)
- Bake 10-15 minutes
Final Comments
variation- if you want a non-vegetarian option add some cooked chicken, prawn, scallop, crab or octopus together with a small amount of anchovies to some of the vegetables
