Potato Wedges with Sour Cream Mayonnaise

List of Ingredients
- 5 large coliban potaotes (or any large potato if you cant find coliban)
- oil (quite a lot- vegetable, canola or olive oil: bu not the most expensive)
- 1/3 cup sour cream
- 1 tsp chives (snipped into bits with scissors or dried from a shaker)
- pepper
Instructions
- Cut potatoes into wedges. Pat dry thoroughly (use a paper towel)
- Heat oil in a large, heavy based pan until moderately hot (test by dropping a small cubo of bread in, if it sizzles it is hot)
- Add wedges and cook 5-10 minutes until golden brown. Drain (once again a paper towel could be useful - no not the same one)
- Combine sour cream chives and pepper in a bowl. Serve immediately as a dip for chips.
Final Comments
I would not call this a meal but a nice warm filling snack.
