    Sweet Thai Tuna Pizza

    serves 3-4 (If not very hungry)

    tinned tuna is delicious, but when you can get fresh fish or chicken which is yummier and more ethical you can use that. Fish can be cut into small bits and used raw (15 minutes will cook it) but panfry chicken fist, then cut it up and use it. Sprinkle a thai spice mix and or sweet chilli sauce over whichever you are using.

    Another idea is to use leftover bits of bbq chook


    List of Ingredients


    • 1 large pizza base
    • 2 tbs pizza sauce or tomato paste
    • 2 cups shredded cheese (pizza mix or whatever you like)
    • 1/2 red onion, thinly sliced
    • 1/2 green capsicum, thinly sliced
    • 150g sweet that chilli tuna (you may choose a different flavour)
    • 2 tbs fresh coriander, chopped (basil is ok if u prefer)
    • rocket leaves to serve (a type of lettuce )


    Instructions


    1. Place pizza base on a tray and spread with pizza sauce. Top with half the cheese, onion, capsicum, tuna and coriander. Sprinkle over remaining cheese.
    2. Bake at 220C for 15 min until lightly browned. Serve topped with rocket


    Final Comments


    put the other half of the onion and capsicum in an airtight container (eg a lunchbox) in the fridge. Slice them and stirfry with garlic, chilli, chicken strips and noodles the next day with a sauce of your choice from the asian section of the supermarket. Serve with leftover rocket leaves and coriander leaves.

    Alternatively use on a long bread roll with lunchmeat and cheese. Wrap in foil and heat 15 minutes in a 180C oven.

    Or chop finely and use in a soup (find a recipe for a soup and add the onion and capsicum early on
