List of Ingredients
- 8 chicken thighs, washed, trimmed and dried (skin on)
- 2 tbs butter
- 3 tbs chopped basil
- cracked black pepper
- 4 shallots chopped
- 4 tbs pinenuts
- 2/3 cup swiss cheese grated
Instructions
- Preheat oven to 180C. Melt butter and lightly saute shallots.
- Remove from heat. Add basil and pinenuts. Allow to cool slightly.
- Add cheese and pepper to taste. Lift skin on thigh and fill with cheese mixture. Secure with toothpicks to prevent filling leaking.
- Bake 45 minutes, basting once.
- When skin is golden and chicken cooked through, remove. Serve with salads (eg cherry tomato and cucumber garnished with basil.)
