    serves 4 as a main or 8 as an entree


    List of Ingredients


    • 8 chicken thighs, washed, trimmed and dried (skin on)
    • 2 tbs butter
    • 3 tbs chopped basil
    • cracked black pepper
    • 4 shallots chopped
    • 4 tbs pinenuts
    • 2/3 cup swiss cheese grated


    Instructions


    1. Preheat oven to 180C. Melt butter and lightly saute shallots.
    2. Remove from heat. Add basil and pinenuts. Allow to cool slightly.
    3. Add cheese and pepper to taste. Lift skin on thigh and fill with cheese mixture. Secure with toothpicks to prevent filling leaking.
    4. Bake 45 minutes, basting once.
    5. When skin is golden and chicken cooked through, remove. Serve with salads (eg cherry tomato and cucumber garnished with basil.)
