Basil buttered beef with matchstick veg

I would adjust the balance so there are more veg than meat
List of Ingredients
- 125g butter, softened
- 1 tbs french mustard
- 1 clove garlic, crushed
- 1/2 cup finely chopped basil (or parsley)
- 1 tbs green peppercorns, crushed
- 1 kg piece beef fillet or porterhouse, trimmed
- 1 lge carrot cut into matchstick strips
- 1 lge zucchini cut into matchstick pieces
- 1 lge capsicum cut into matchstick strips
Instructions
- Combine butter, mustard, garlic, basil and green peppercorns together.
- Roll 1/2 the butter into a log shape, wrap in foil and refrigerate. Spread the rest over the beef and bake at 200C for 30 minutes (med) or until done to your liking. Allow to rest 10 minutes.
- Blanch the veg in boiling water for 10 minutes and drain. Carve the beef into thick slices. Serve each slice topped with matchstick veg and a slice of basil butter.
Final Comments
You would need a salad or boiled new potatoes with this to make it serve 8 :)
