Fillet of Beef Stroganoff

Serve on a bed of rice (or mashed potato), with steamed veggies and garnished with chives
List of Ingredients
- 800g beef fillet cut in 5cm strips
- 50ml peanut oil (or olive or ghee)
- juice of 1/2 lemon
- 50g paprika
- 50g swiss brown mushrooms sliced (if you cant get swiss brown use normal)
- 100ml brandy
- 75g shallots, finely chopped
- 200ml sour cream
- 75 ml white wine
- 2 tbs chopped chives
- 40g butter, cut in small cubes (if your religion forbids butter, leave it out)
- salt and pepper
Instructions
- Heat oil in a large pan over med flame. Season meat with salt and paprika. Brown quickly 2-3 minutes
- Remove from pan and set aside. Add butter, shallots, and mushrooms to the pan for a few minutes. Flambe the pan using brandy.
- Add wine and sour cream. Add lemon juice and heat to reduce to sauce consistancy. Return beef to pan and stir to coat with sauce.
- Check and adjust seasoning before serving.
Final Comments
I would suggest this is good for a dinner party or date. Especially if they know you got fancy enough to flambe it
