Freekeh is made from wheat. Even though nothing is like it, if you can't get it use bulghur wheat or couscous or polenta.
List of Ingredients
- 2 cups cooked Freekeh (cracked grain)
- 500g fine mince (beef, chicken, lamb, roo)
- 2 tsp ground coriander seed
- 1 tsp ground cumin
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1 egg, lightly beaten
- 1 tsp black pepper
- 1 cup chopped pinenuts
- 3 cloves crushed garlic
- 1 tsp salt
- 2 tbs olive oil
- 1/2 cup chopped coriander
- 1/2 cup chopped parsley
- extra oil for cooking
Instructions
- Mix all ingredients together well and knead for 5 minutes or until the mixture comes together.
- Shape into balls or patties. Brush lightly with extra oil and bake in a moderate oven (180C/ 360F) 15-20 minutes until firm and golden.
Final Comments
Can be grilled or barbecued instead. Serve in a wrap with salad or any way you like.
