Mint Lamb Koftas

as an alternative serve with couscous or in a wrap
List of Ingredients
- 1 small onion, chopped finely
- 3 cloves garlic, chopped finely
- 1/3 cup firmly packed, fresh mint leaves
- 1/4 cup firmly packed continental parsley leaves
- 750g lamb mince
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/3 cup packaged breadcrumbs
- oil for shallow frying
- pepper and salad for serving
- 200ml plain yoghurt
- 2 tbs lemon juice
- 2 tbs water
- 1 clove garlic, crushed
- 1/4 tsp turmeric
Instructions
- Process onion, garlic and fresh herbs until finely chopped. Place in bowl with lamb mince, spices and breadcrumbs. Mix well (best use your clean hands)
- Divide mixture into 12 equal portions; roll and press into 13cm long sausage shapes
- Heat oil in a large pan, add koftas, cook until browned all over and cooked through.
- Combine yoghurt, lemon juice, water, garlic and turmeric in a small jug to make dip/sauce
- Insert medium sized wooden skewer into each kofta (not if using them in wraps). Top with yoghurt dip, sprinkle with pepper and serve with salad
