Minted Lamb Cutlets (and sauce)

Serve with mashed potatoes, green beans and cherry tomatoes, or with salad and sauce in a wrap
List of Ingredients
- lamb cutlets (can also use loin chops or chump chops)
- mint jelly
- 2 tsp olive oil
- juice of 2 oranges
- salt and pepper
Instructions
- Spread cutlets with mint jelly. Heat oil in frypan over med-high heat.
- Cook lamb cutlets 2-3 minutes each side.
- Remove from heat and rest at least 5 min before serving.
- Drain excess fat from pan. Add 1 1/2 tsp mint jelly and juice of 2 oranges. Simmer 2 minutes. Season and serve.
