    Moroccan Spice encrusted Lamb

    Serve sliced diagonally on a bed of ratatoille or couscous if u are a carb freak.

    serves 4


    List of Ingredients


    • 2 tbs black peppercorns
    • 2 tbs whole coriander
    • 8 cardamom pods
    • 2 tsp paprika
    • 4 pces of lamb strap (10cm each)
    • 3 star anise
    • 6 whole cloves
    • 1 cup toasted almonds
    • 1 tsp sea salt
    • olive oil


    Instructions


    1. Heat all spices except almonds, paprika and salt in a dry frypan over medium gas flame until aromatic.
    2. Cool. Place in coffee blender and grind to a breadcrumb consistency. Remove. Grind almonds with paprika and salt.
    3. combine the two spice mixtures. Trim lamb and lightly oil it.
    4. coat lamb in spice mixture and refrigerate 1 hour.
    5. Preheat oven 220C. Heat oil in frypan over high flame. Cook lamb 2 min all sides.
    6. Transfer to baking tray and cook in oven 3 minutes. Allow to rest before slicing.
