Moroccan Spice encrusted Lamb

Recipe Introduction
Serve sliced diagonally on a bed of ratatoille or couscous if u are a carb freak.

List of Ingredients
- 2 tbs black peppercorns
- 2 tbs whole coriander
- 8 cardamom pods
- 2 tsp paprika
- 4 pces of lamb strap (10cm each)
- 3 star anise
- 6 whole cloves
- 1 cup toasted almonds
- 1 tsp sea salt
- olive oil
Instructions
- Heat all spices except almonds, paprika and salt in a dry frypan over medium gas flame until aromatic.
- Cool. Place in coffee blender and grind to a breadcrumb consistency. Remove. Grind almonds with paprika and salt.
- combine the two spice mixtures. Trim lamb and lightly oil it.
- coat lamb in spice mixture and refrigerate 1 hour.
- Preheat oven 220C. Heat oil in frypan over high flame. Cook lamb 2 min all sides.
- Transfer to baking tray and cook in oven 3 minutes. Allow to rest before slicing.
