Pear and Cheese stuffed chicken breast

- 2 pears, sliced
- 2 rashers bacon
- 4 chicken breasts
- 100g (blue vein, edam or swiss) cheese crumbled
- 2 tsp mustard (french or wholegrain)
Instructions
- Cut a large pocket in each chicken breast.
- Spread the inside with mustard. Layer pear, bacon, cheese in pockets.
- Secure with toothpicks. Panfry or grill until tender (careful not to undercook).
- Serve with a squeeze of lemon, a fresh green salad or vegies!
Final Comments
Use very firm pears (they will soften as they cook). Slice leftovers thinly and serve cold with salad (or on sandwiches)
