    List of Ingredients


    • 2 pears, sliced
    • 2 rashers bacon
    • 4 chicken breasts
    • 100g (blue vein, edam or swiss) cheese crumbled
    • 2 tsp mustard (french or wholegrain)


    Instructions


    1. Cut a large pocket in each chicken breast.
    2. Spread the inside with mustard. Layer pear, bacon, cheese in pockets.
    3. Secure with toothpicks. Panfry or grill until tender (careful not to undercook).
    4. Serve with a squeeze of lemon, a fresh green salad or vegies!


    Final Comments


    Use very firm pears (they will soften as they cook). Slice leftovers thinly and serve cold with salad (or on sandwiches)
