List of Ingredients
- 1 rack ribloin pork (4-5 ribs)
- 1 tbs lemon juice
- 2 garlic cloves, peeled and cut into slivers
- oil
Instructions
- Preheat oven to 180C. Using a pointed knife, make slits in the thickest part of the pork and insert garlic into them.
- Brush surface with oil and lemon juice. Elevate pork on a rack and place onto a baking dish.
- Bake on top shelf of oven 180C 60 minutes per kg.
- It is cooked when the internal temp is 74C-76C and cooked juices run clear when pierced.
- Stand rack in a warm place 10 minutes before carving (rest)
