Scallopine with Cream

Recipe Introduction
Another high fat comfort recipe good with creamy mash or potato bake
List of Ingredients
- 4 small veal steaks (I have sometimes used beef)
- 1 small onion, finely chopped
- 30g butter
- 1/2 cup stock (chicken, veg or light beef)
- freshly ground pepper
- seasoned flour
- 125g small mushrooms
- 3/4 cup white wine
- salt
- 1/4 cup cream
- finely chopped parsley
Instructions
- Beat steaks until thin. lightly dust with seasoned flour.
- Heat large saute pan, add butter and when foaming add veal steaks.
- Saute briskly 3 mins each side. Remove to a heated plate.
- In same pan add onion and whole mushrooms. saute a few minutes.
- Add wine. Allow to boil and reduce by half. add stock
- Season with salt and pepper. Add veal back to the pan.
- When sauce is boiling cover pan and simmer 6 minutes.
- Remove from heat and add 1 tbsp butter kneaded with 1 tbs flour (beurre marie it is called). Shake the pan to distribute this throughout the sauce.
- Place pan back on heat. Allow sauce to come to boiling point. Add in the cream.
- Adjust seasoning and simmer for a further 1 minute.
- adjust veal steaks on heated serving dish, spoon sauce over them and dust with parsley.
