    serves 4


    List of Ingredients


    • 1 tbs oil
    • 1.2kg chicken thigh cutlets
    • 10 baby onions, halved
    • 2 bacon rashers, chopped
    • 200g button mushrooms, halved
    • 1 clove garlic, crushed
    • 2 tbs plain flour
    • 1 cup red wine
    • 3/4 cup chicken stock
    • 2 tsp chopped fresh thyme
    • extra fresh thyme to garnish


    Instructions


    1. Heat oil in large pan. Add chicken. Cook on both sides until golden brown. Drain on absorbent paper.
    2. Add onions and bacon to same pan. Cook, stirring until bacon is crisp. Add mushrooms, garlic and flour, stir until combined.
    3. Return chicken to pan; stir in wine, stock and thyme. Bring to boil. Simmer, covered for 20 minutes.
    4. Remove chicken. Simmer a further 10 minutes or until chicken is tender.
    5. Serve garnished with extra fresh thyme.


    Final Comments


    can be made up to 2 days ahead and kept covered in refrigerator or frozen up to 2 months!
