Chicken in Red Wine

Recipe Introduction

List of Ingredients
- 1 tbs oil
- 1.2kg chicken thigh cutlets
- 10 baby onions, halved
- 2 bacon rashers, chopped
- 200g button mushrooms, halved
- 1 clove garlic, crushed
- 2 tbs plain flour
- 1 cup red wine
- 3/4 cup chicken stock
- 2 tsp chopped fresh thyme
- extra fresh thyme to garnish
Instructions
- Heat oil in large pan. Add chicken. Cook on both sides until golden brown. Drain on absorbent paper.
- Add onions and bacon to same pan. Cook, stirring until bacon is crisp. Add mushrooms, garlic and flour, stir until combined.
- Return chicken to pan; stir in wine, stock and thyme. Bring to boil. Simmer, covered for 20 minutes.
- Remove chicken. Simmer a further 10 minutes or until chicken is tender.
- Serve garnished with extra fresh thyme.
Final Comments
can be made up to 2 days ahead and kept covered in refrigerator or frozen up to 2 months!
