List of Ingredients
- 250g ricotta cheese
- 1 tbs fresh dill, finely chopped
- 1 tbs lemon juice
- 4 bagels
- 4 slices smoked salmon
- 4 eggs
- 4 tbs water
- freshly ground black pepper
- 1 cup baby spinach leaves
- canola oil spray
Instructions
- Mix ricotta with dill and lemon juice. Cut bagels in half and spread each side with ricotta mixture.
- Add 1 slice smoked salmon to bottom half of each bagel.
- Whisk 1 egg, 1 tbs water and salt and pepper in a bowl. Lightly spray non stick frypan and cook egg mixture until set.
- While omelette still in pan, place 1/4 cup spinach leaves on one side and fold omelette over them. Remove, cut in half and place on top of one smoked salmon bagel. Repeat with other eggs.
