    This is an easy and inexpensive recipe.


    List of Ingredients


    • 750g (1 1/2 lb) tomatoes
    • 1 clove garlic
    • 2 tbs chopped parsely
    • 1/2 tbs chopped basil or marjoram
    • 2-3 tbs olive oil
    • 4 cups chicken (or use vegetarian) stock)
    • salt and pepper
    • pinch of sugar


    Instructions


    1. Peel tomatoes (easiest way to do that is cover them with boiling water, put a lid on and come back in five minutes, the peel should slide off - especially if you nicked it slightly with a knife first)
    2. Chop peeled tomatoes roughly
    3. Crush garlic and place in saucepan with tomatoes, herbs and olive oil. Cook gently about 5 minutes.
    4. Add stock, salt, pepper and sugar and cook for a further 5 minutes.
    5. Serve hot in winter or autumn and try it chilled in the summer.
