This is an easy and inexpensive recipe.
List of Ingredients
- 750g (1 1/2 lb) tomatoes
- 1 clove garlic
- 2 tbs chopped parsely
- 1/2 tbs chopped basil or marjoram
- 2-3 tbs olive oil
- 4 cups chicken (or use vegetarian) stock)
- salt and pepper
- pinch of sugar
Instructions
- Peel tomatoes (easiest way to do that is cover them with boiling water, put a lid on and come back in five minutes, the peel should slide off - especially if you nicked it slightly with a knife first)
- Chop peeled tomatoes roughly
- Crush garlic and place in saucepan with tomatoes, herbs and olive oil. Cook gently about 5 minutes.
- Add stock, salt, pepper and sugar and cook for a further 5 minutes.
- Serve hot in winter or autumn and try it chilled in the summer.
