Horseradish Patties with Chive Sauce

serve with creamy mashed potatoes or buttered noodles or on toasted hamburger buns
List of Ingredients
- 1 kg (2lb) topside mince
- salt
- pepper
- 1 cup soft breadcrumbs
- 60g (2oz) butter, softened
- 3 tbs grated horseradish
- a little oil
- 2 tbs lemon juice
- 1/2 cup stock
- 1 cup cream
- 3tbs chopped parsley and chives to finish
Instructions
- Season mince with salt and a good grinding pepper. Fork in the breadcrumbs.
- Cream together the butter and horseradish and combine with the meat. handle mixture lightly not to compact it too much.
- Shape into 6 generous patties. Heat just enough oil to grease a heavy frying pan and cook patties over high heat for about 3 min each side.
- The centre should be still pink but the outside well browned. Transfer to a heated platter and keep warm while the sauce is being made.
- Make the sauce by adding lemon juice and stock into frying pan and cook over a high heat until reduced by about a half.
- Add cream and boil until slightly thickened stirring in any slightly brown bits. Add salt to taste and half the herbs.
- Pour sauce over patties and sprinkle with remaining parsley and chives.
