List of Ingredients
- 2 cups coarsley chopped continental parsley
- 2 cloves garlic, crushed
- 1/2 cup olive oil
- 4 boneless white fish fillets
- 1/4 cup grated fresh parmesan cheese
- potato wedges and sugar snap peas to serve
- sliced lemon to garnish
Instructions
- Blend or process parsley, garlic and oil until smooth
- Make 3 shallow diagonal cuts about 2 cm apart on one side of each fillet. Place fish on a greased oven tray
- Spread half the parsley mixture over the fillets; sprinkle with the cheese.
- Cook under a hot grill for about 4 minutes until cooked through.
- Serve fish with remaining parsley mixture, potato wedges and sugar snap peas, garnich with sliced lemon.
Final Comments
you could use mashed potato or couscous or rice instead of wedges. Youc ould vary the vegetables, eg a salad instead of peas
