Pineapple Flan (no bake)

Recipe Introduction
serves up to 8. Sometimes grandma mixed the creamy pineapple filling through rice to make a sort of rice cream, instead of making a crust.
List of Ingredients
- 100g shortbread (Boston shortbread it says)
- 2 tbs melted butter
- sprinkle of mixed spice (optional)
- 400g can sweetened condensed milk
- 450g can pineapple pieces (drained well)
- 1/4 cup fresh lemon juice
- 1 tsp gelatine
- 1 tbs hot water
- whipped cream or thickened cream
- garnish - pineapple slices, mandarin or orange segments, mint
Instructions
- Place biscuits in a plastic bag and crush with a rolling pin. Spice crumbs (a little) if you like and add melted butter.
- Press mixture into 20cm (8 inch) pie plate to form your shell. Chill well.
- Mix condensed milk with pineapple pieces and lemon juice. Dissolve gelatine in hot water and combine with mixture.
- Pour into flan shell and refrigerate until set.. Top with cream and garnish with fruit and mint. Serve chilled.
