    Pineapple Flan (no bake)

    Recipe Introduction


    serves up to 8. Sometimes grandma mixed the creamy pineapple filling through rice to make a sort of rice cream, instead of making a crust.


    List of Ingredients


    • 100g shortbread (Boston shortbread it says)
    • 2 tbs melted butter
    • sprinkle of mixed spice (optional)
    • 400g can sweetened condensed milk
    • 450g can pineapple pieces (drained well)
    • 1/4 cup fresh lemon juice
    • 1 tsp gelatine
    • 1 tbs hot water
    • whipped cream or thickened cream
    • garnish - pineapple slices, mandarin or orange segments, mint


    Instructions


    1. Place biscuits in a plastic bag and crush with a rolling pin. Spice crumbs (a little) if you like and add melted butter.
    2. Press mixture into 20cm (8 inch) pie plate to form your shell. Chill well.
    3. Mix condensed milk with pineapple pieces and lemon juice. Dissolve gelatine in hot water and combine with mixture.
    4. Pour into flan shell and refrigerate until set.. Top with cream and garnish with fruit and mint. Serve chilled.
