Recipe Introduction
serves 4. can be served with salad and crusty bread and a glass of bubbly
List of Ingredients
- 375g pasta (I used chicken and mushroom ravioli, but it does not have to be filled pasta)
- 1 small onion, very finely chopped
- 8 medium mushrooms, thinly sliced
- 1 head of broccoli, chopped into bite sized pieces
- 250g seafood of your choice (I used marinara mix)
- salt and pepper
- 1 lime
- 1 tbs dry sherry (optional)
- 300ml cream
- 3 tbs butter
- 1 clove garlic (optional)
- generous amount of dried sage or marjoram (if you like)
- sprinkle of nutmeg
Instructions
- Heat 1 tbs butter in a large pan or wok. Add onion and stir until collapses. Add salt, pepper, herbs and nutmeg.
- Melt the rest of the butter in and add garlic and mushrooms, stir for 2 minutes
- Add rind of the lime (grated) and juice of half of it, also the sherry (if not using sherry consider using the juice of the whole lime). Stir
- Add cream, allow to heat through and add in fish (or seafood) and stir. Allow to cook gently on the lowest heat about 5 minutes.
- Meanwhile bring a large pot of salted water to the boil. Add broccoli and pasta and cook about 5 minutes until the broccoli is bright green. Drain well.
- Mix pasta and broccoli through sauce and serve immediately. If you should have any leftovers they will be nice too.
Final Comments
feel free to use spring onion instead of onion, lemon instead of lime, white wine instead of sherry (any logical substitution should work)
