List of Ingredients
- 500g coliban potatoes - peeled, boiled and mashed
- 1/4 cup grated parmesan cheese
- 1 egg yolk
- 3/4-1 cup plain flour
- freshly ground black pepper to taste
Instructions
- Measure 2 cups mashed potato into a large bowl. Add egg yolk, parmesan and pepper. Mix until combined.
- Gradually add enough flour to form a slightly sticky dough. Knead adding more dough if required until a smooth dough forms.
- Divide dough into 4 equal portions. On a floured surface, roll each portion to form a 2cm thick sausage.
- Cut into 2.5cm slices and shape each into an oblong.
- Press oblong onto floured palm of hand with a fork. This will flatten and indent one side with a pattern.
- Boil gnocchi in large saucepan of boiling water for about 2 minutes (until they float to the surface)
- Serve with Napoletana or Bolognese sauce, or simply with basil and garlic infused extra virgin olive oil (suggestions).
