Lasagna alla vegetariana con formaggio

serves 4-5. The title is a bit nuts because who ever heard of a lasagna that wasn't con formaggio anyway? but i kept it as whoever had it.
List of Ingredients
- 100-125g fresh lasagna sheets per person
- 1 onion chopped
- 2 cloves garlic
- 2 medium carrots
- 1/2 doz yellow button squashes (ie 6 of them)
- 1 lge stick celery, chopped
- 1 small red pepper
- 1/2 bunch well washed spinach
- 2 x 425g cans tomato, chopped
- 4 tbs tomato paste
- fresh basil and oregano (chopped or dried)
- salt and pepper to taste
- 2 tbs butter
- 2 tbs flour
- 1 cup ricotta cheese
- 1 1/2 cups milk
- 200g finely grated cheese of your choice
Instructions
- saute onion and garlic in a little butter in a large saucepan. Add all vegetables except spinach leaves.
- Add tomato paste, herbs, salt and pepper.
- Cut lasagne sheets to size and cook according to packet directions (ie probably don't cook these days). Drain and rinse well.
- Melt 2 tbs butter, add flour, stirring with a wooden spoon cook for 2 minutes (don't brown).
- Add milk gradually and stirring to avoid lumps. Bring to the boil.
- Reduce heat, add cheeses and season.
- Place alternate layers of lasagne sheets, spinach leaves, vegetable mixture and white sauce in a large greased baking dish.
- Finish layers with vege sauce, sprinkle with extra grated cheese.
- Bake 180C until cooked through.
Final Comments
Very nice served with fresh garden salad.
