Recipe Introduction
This is a gnocchi dish.
List of Ingredients
- potatoes
- flour
- egg (optional)
- salt
- 1 cup white wine
- small mussels
- saffron stamens (toasted and ground)
- quite a lot of butter
- carrot
- celery
- leek
- fennel
- water to cook gnocchi
Instructions
- Steam some potatoes, drain and leave to steam out remnant of water. Mash
- Add flour and egg (if using)with a pinch salt. Roll into a sausage shape and cut into slices.
- Pour 1 cup white wine into a hot saucepan. Add the mussels and leave for a while. Shake the saucepan occaisionally to distribute heat.
- As soon as mussles open, strain - reserving the liquor. Discard unopened mussels (as ALWAYS)
- Add some liquor to a saucapan with the saffron. Whisk over heat adding in knobs of butter a little at a time (but lots over all)
- Finaly dice the carrots, celery, leek and fennel and blanch in some more of the liquor.
- Boil lots of water with some salt. Test with one gnocchi, if it holds its shape temperature is right. Cook all the gnocchi.
- Drain gnocchi and toss them in the saffron sauce.
- Scatter the blanched vegetables over the mussels (a bit on each mussle) and top with the gnocchi.
