Pasta with Chicken and Pesto

serves 3-4. This had a LOT of chicken in it, I would probably halve the chicken or double everything else. You can use just pine nuts if you prefer and of course you could add grated parmesan but I didn't.
A blender would make it all easier but this was a lovely rustic feel.
List of Ingredients
- 3 cloves garlic, very finely chopped
- 55g slivered almonds and pinenuts mix
- salt
- 300g baby spinach
- 1 bunch basil
- about 1/2 lemon (juice of)
- extra virgin olive oil to get desired consistancy (about 1/4 cup)
- 1 spring onion (could use more or none or red onion instead)
- pepper to taste
- 4 chicken thigh fillets
- about 1/4 cup cream
- 300g pasta (about) I used fettucine but use what you like
Instructions
- Chop garlic very small and mix with nuts.
- Shred the baby spinach very very fine with a knife and mix through garlicy nuts adding lemon juice and olive oil. Add very finely chopped spring onion
- Tear the basil leaves off the stalks and shred them very fine. Mix in with spinach. Grind in lots of pepper.
- Cut chicken fillets into small bite sized pieces and barbecue or panfry them (preferably get your 13 year old and 8 year old to do this job like I did)
- Cook pasta in a lot of water according to packet directions. Drain and mix through cream over low heat.
- Add pesto to pasta and turn off heat. Mix well. Stir through cooked chicken and serve.
