Ravioli with Prawns

Recipe Introduction
This is an easy throw together for guests when you want to spend more time catching up than cooking. Good results if you want someone to stay....
List of Ingredients
- extra virgin olive oil (a grassy one)
- 2-5 cloves garlic
- 100g button mushrooms
- 100-200g vegies of your choice (see note)
- 100g prawns
- 500g ravioli (ready made)
- 1/4-1/2 cup mozzarella
- chilli flakes
Instructions
- Cook and drain ravioli (slightly undercook)
- Heat oil. Add in garlic.
- Toss in halved mushrooms.
- Add in the vegies. Stir until hot.
- Add in prawns. Cook until pink.
- Toss through ravioli, mozzarella and chilli flakes. Add more of the oil if desired. Serve hot.
- Note: Good vegies to use are halved cherry tomatoes, blanched beans or broccoli, baby spinach leaves, roasted zucchini, squash, eggplant or pumpkin, corn kernels, sliced leek, finely sliced brussels sprouts (yes I am serious) or whatever you like
Final Comments
serves 4, or 2 now with leftovers for late night snack or tomorrow's lunch
