List of Ingredients
- 1 can vegetable soup
- 4 lge sheets lasagne
- 1 cup fresh basil leaves
- 2 small eggplants, sliced
- 4 cups spinach leaves, blanched
- 500g tomatoes
- 1 cup grated mozzarella
- 1 cup grated parmesan
Instructions
- Panfry eggplant in oil until cooked. Oil baking dish.
- Line dish with lasagne. Layer with soup, eggplant, spinach, tomatoes, basil and cheeses. Repeat until dish is full.
- Bake 190C 30-40 minutes. Serve with fresh green salad.
