    List of Ingredients


    • 1 can vegetable soup
    • 4 lge sheets lasagne
    • 1 cup fresh basil leaves
    • 2 small eggplants, sliced
    • 4 cups spinach leaves, blanched
    • 500g tomatoes
    • 1 cup grated mozzarella
    • 1 cup grated parmesan


    Instructions


    1. Panfry eggplant in oil until cooked. Oil baking dish.
    2. Line dish with lasagne. Layer with soup, eggplant, spinach, tomatoes, basil and cheeses. Repeat until dish is full.
    3. Bake 190C 30-40 minutes. Serve with fresh green salad.
