Banana Peach Flans

- 2 ladyfinger bananas, thinly sliced
- 1/4 cup brown sugar
- 2 tsp cornflour
- 18 frozen mini flan cases
- 415g can pie peaches
- 2 tsp lemon juice
- 200g tub french vanilla fruche (or yoghurt, even cream)
Instructions
- Bake pie cases at 180C for 10 minutes until slightly golden. Allow to cool.
- Place peaches, 1 banana, sugar and lemon juice into a blender and puree until well combined.
- Mix cornflour with a small amount of water to make a paste. Add tot he fruit puree. Heat fruit puree over a medium heat until mixture boils and thickens. Allow to cool at room temperature.
- Mix fruche into the cooled fruit mixture. Set in refrigerator 2 hours.
- Divide mixture evenly between the flan cases. decorate tops of flans with slices of lady finger bananas (brushing with lemon will keep banana slices from browning but serve soon after making.
