Mushroom and Cheese Strudel

serves 4, a good winter entree or summer lunch or brunch. could probably make a cold picnic food too. Suitable for vegetarian diet
List of Ingredients
- 2 tbs olive oil
- 2 brown onions, thinly sliced
- 2 garlic cloves, crushed
- 2 tsp honey
- 500g button mushrooms, sliced
- 150g brie cheese, chopped
- 2 tbs chopped parsley
- salt and pepper
- 2 sheets frozen puff pastry
- 1 egg, lightly beaten
Instructions
- Preheat oven to 200C. Heat oil in frypan over med heat. Add onions and garlic and cook, stirring often for 10 minutes until soft and light golden.
- Stir in honey and cook for 2 minutes.
- Add mushrooms, increase to high and cook for 8 minutes until liquid evaporates. Remove from heat and set aside to cool.
- Stir in cheese, parsley, salt an pepper.
- Cut one sheet pastry in half, place onto greased baking tray (allowing room for them to spread.
- Spoon mushroom mix evenly over both halves leaving a 1cm (1/2 inch) border all around.
- Cut second pastry sheet into half and place on top, pressing edges together. Cut a cross in the centre.
- Brush with egg and season with salt and pepper. Bake 20-25 minutes until puffed and golden.
