    Mushroom and Cheese Strudel

    serves 4, a good winter entree or summer lunch or brunch. could probably make a cold picnic food too. Suitable for vegetarian diet


    List of Ingredients


    • 2 tbs olive oil
    • 2 brown onions, thinly sliced
    • 2 garlic cloves, crushed
    • 2 tsp honey
    • 500g button mushrooms, sliced
    • 150g brie cheese, chopped
    • 2 tbs chopped parsley
    • salt and pepper
    • 2 sheets frozen puff pastry
    • 1 egg, lightly beaten


    Instructions


    1. Preheat oven to 200C. Heat oil in frypan over med heat. Add onions and garlic and cook, stirring often for 10 minutes until soft and light golden.
    2. Stir in honey and cook for 2 minutes.
    3. Add mushrooms, increase to high and cook for 8 minutes until liquid evaporates. Remove from heat and set aside to cool.
    4. Stir in cheese, parsley, salt an pepper.
    5. Cut one sheet pastry in half, place onto greased baking tray (allowing room for them to spread.
    6. Spoon mushroom mix evenly over both halves leaving a 1cm (1/2 inch) border all around.
    7. Cut second pastry sheet into half and place on top, pressing edges together. Cut a cross in the centre.
    8. Brush with egg and season with salt and pepper. Bake 20-25 minutes until puffed and golden.
