Mushroom and Sweet Onion Pastries

List of Ingredients
- 2 tbs olive oil
- 2 sheets puff pastry
- 75g goat's cheese, crumbled
- 4 medium onions, thinly sliced
- 300g cup mushrooms sliced
- 1/3 cup basil leaves (torn)
- 1tbs caster sugar
- 1 tbs pine nuts
- ground black pepper to taste
Instructions
- Preheat oven to 180C. Lightly grease a baking tray with oil. Heat oil in a medium frying pan over medium heat.
- Add onions and sugar, cook for 10 minutes or until onions are soft and golden. Remove from heat and cool.
- Place frozen pastry sheets on to a board 2-3 minutes to defrost slightly. Lightly brush one sheet of pastry with water.
- Place the remaining pastry sheet on top and gently press together. Cut pastry into quarters and place onto prepared tray.
- Spread onion mixture over pastry squares and place onto prepared tray. Spread onion mixture over pastry squares leaving a 1cm border around the edges.
- Top each with mushrooms, pinenuts and goats cheese. Bake for 15-18 minutes or until golden and puffed.
- Top with basil, season with pepper and serve immediately
