    Mushroom and Sweet Onion Pastries

    List of Ingredients


    • 2 tbs olive oil
    • 2 sheets puff pastry
    • 75g goat's cheese, crumbled
    • 4 medium onions, thinly sliced
    • 300g cup mushrooms sliced
    • 1/3 cup basil leaves (torn)
    • 1tbs caster sugar
    • 1 tbs pine nuts
    • ground black pepper to taste


    Instructions


    1. Preheat oven to 180C. Lightly grease a baking tray with oil. Heat oil in a medium frying pan over medium heat.
    2. Add onions and sugar, cook for 10 minutes or until onions are soft and golden. Remove from heat and cool.
    3. Place frozen pastry sheets on to a board 2-3 minutes to defrost slightly. Lightly brush one sheet of pastry with water.
    4. Place the remaining pastry sheet on top and gently press together. Cut pastry into quarters and place onto prepared tray.
    5. Spread onion mixture over pastry squares and place onto prepared tray. Spread onion mixture over pastry squares leaving a 1cm border around the edges.
    6. Top each with mushrooms, pinenuts and goats cheese. Bake for 15-18 minutes or until golden and puffed.
    7. Top with basil, season with pepper and serve immediately
