    Braised Chicken Thighs

    Chicken with the bone in is not just cheaper, for a casserole like this the bones add flavour too.


    List of Ingredients


    • 1 kg chicken thighs
    • 1 clove garlic, crushed
    • 1/2 tsp sugar
    • 2 tbs oil
    • 1 ripe tomato, chopped
    • salt, pepper,
    • 1 medium onion, finely chopped
    • 2 tbsp wine
    • 1 bay leaf


    Instructions


    1. Wash and trim chicken thighs. Pat dry with paper towels.
    2. Heat oil in medium saucepan and brown thighs on each side. Remove to a plate. Add onion and garlic and saute 3 minutes.
    3. Drain oil from saucepan. Add chopped tomatoes to pan and cook for one minute. Add remaining ingredients.
    4. Return chicken thighs to saucepan. Cover with lid, turn down heat and simmer slowly 40 minutes.
    5. Remove to serving plate.


    Final Comments


    Good served with fresh fettucine, steamed greens or squash or a salad
