Braised Chicken Thighs

Chicken with the bone in is not just cheaper, for a casserole like this the bones add flavour too.
List of Ingredients
- 1 kg chicken thighs
- 1 clove garlic, crushed
- 1/2 tsp sugar
- 2 tbs oil
- 1 ripe tomato, chopped
- salt, pepper,
- 1 medium onion, finely chopped
- 2 tbsp wine
- 1 bay leaf
Instructions
- Wash and trim chicken thighs. Pat dry with paper towels.
- Heat oil in medium saucepan and brown thighs on each side. Remove to a plate. Add onion and garlic and saute 3 minutes.
- Drain oil from saucepan. Add chopped tomatoes to pan and cook for one minute. Add remaining ingredients.
- Return chicken thighs to saucepan. Cover with lid, turn down heat and simmer slowly 40 minutes.
- Remove to serving plate.
Final Comments
Good served with fresh fettucine, steamed greens or squash or a salad
