    serves 6, prep 15 min (sic) cook 55 min


    List of Ingredients


    • 6 tbs olive oil
    • 1 lge onion, chopped
    • 4 garlic cloves, chopped
    • 2 red capsicums, deseeded and roughly chopped
    • 3 x 400g tins diced tomatoes with basil and garlic (Plain is ok if you need)
    • 1 1/2 cups reduced salt chicken stock
    • 6 chicken thigh pieces
    • 1/2 cup black olives
    • 2 cups chopped fresh parsely


    Instructions


    1. Heat 3 tbs olive oil in large pot and cook onion, garlic and capsicum over med heat 3-4 mins until they start to soften.
    2. Add tomatoes and stock and bring to boil. Season to taste with salt and pepper and pour sauce into large oven-proof dish
    3. Heat remaining oil in large frypan and cook chicken pieces until well browned all sides. Place browned chicken into oven proof dish, push each thigh into the sauce
    4. Sprinkle over olives and half the fresh chopped herbs. Cover and bake 180C for 45 mins. Sprinkle with herbs
    5. Serve with salad and chunks of warm bread
