    I'd use frozen rather than tinned veg. You could use tofu and beansprouts instead of the meat.


    List of Ingredients


    • 1 1/2 cups shortgrain rice
    • 1 3/4 cups water
    • 1/4 cup diced ham
    • 1/4 cup diced chicken
    • 2 1/2 tsp veg oil
    • 100g peeled, cooked prawn
    • 450g can pineapple pieces, drained
    • 440g can peas (drained)
    • 440g can corn kernels (drained)
    • 1 tbs soy sauce


    Instructions


    1. Pour rice and water into a saucepan and cover tightly. Bring to the boil, reduce heat to very low and cook for 15 minutes without opening.
    2. Heat frypan and stirfry ham and chicken for 1 minute.
    3. Add prawns, pineapple, peas, corn and sauce and stir over high heat until warmed through. Add rice and mix well over heat for 2 minutes.
    4. Garnish with diced red capsicum, shallots and parsely (or coriander)
