Brown Rice and Avocado Salad

Serves 2
Originally this was a recipe with bacon but I don't do bacon so I adapted it. So if you don't like some of it just adapt away. Try to keep the same amount of veg in it, but vary them as you like.
List of Ingredients
250g cooked brown rice (one of those packets of precooked is ok if you are as lazy as me) or use couscous or freekeh
2 tbsp extra virgin olive oil (optional if you are a low-fat nazi)
100g cooked chicken, or any leftover roast meat OR fetta or tofu for vegetarians. Can also use 100g tinned tuna
handful cahews (optional) OR use sunflower seeds if you are in a nut-free workplace
1 tbs lemon juice (stuff it just put in half the lemon)
2 tbs freshly chopped herbs (dill, parsley, coriander, basil or mint might do)
1 small lebanese cucumber halved and sliced (or use grated zucchini or corn kernels)
1 ripe tomato, diced (or use red capsicum)
1 avocado, sliced or diced
Recipe
1.Cook the rice if needed (even if it is the rpecooked stuff).
2, Combine with lemon, oil and herbs and stir well
3.Add in all other ingredients. Serve warm or chilled. Can also be a good accompaniment for barbecues
