Fish Salad with Potato

This is based on a nicoise salad. All of it except the avocado keeps quite well. If you want more like a real nicoise add cos lettuce, olives and maybe anchovies. Other things I sometimes add are capers or cucumber (sliced)
NB - this recipe is not cheap but it will make you feel energetic and maybe even lift your mood
List of Ingredients
- 4 medium potatoes (or 2 large 2 small)
- 4 ripe tomatoes (or 1-2 punnets cherry tomato)
- 2 fillets atlantic salmon (or tuna, or rainbow trout)
- butter or oil
- lemon dressing (see below or use one of my recipes)
- extra salt and lemon (optional)
- 2 spring onions (at least)
- 4 cloves garlic (I am not joking)
- a large handful of green beans (double handful prob best)
- 2 medium avocados
- 3 eggs
Instructions
- Cook potatoes in boiling salted water until firm but soft enough to eat. Remove.
- Hard boil eggs (in vinegared boiling water for 6 minutes). Place in cold water
- Finely slice spring onion (use red onion if you prefer) and very finely chop garlic. Place in salad bowl with a little dressing.
- Cube potatoes and toss in the dressing, adding more as needed.
- Bring salted water to the boil. Trim beans (cut off anything that looks yucky) and boil for about 3 minutes (until bright green). Drain immediately and refresh with cold water.
- Add beans and chopped eggs to salad.
- Heat pan with butter or oil. Fry fish about 2 minutes per side until cooked through (but only just. If you are squeamish about fish and like a milder flavour add salt and lemon to pan.
- Flake fish into bit sized pieces and add to salad. Cut tomatoes into bite size wedges or cubes and add in. Toss well ensuring there is a fair amount of dressing (but not the whole salad dripping with it.
- Add more salt and pepper if you like.
- Divide avocado among 4 plates (ie half each...sliced). Top with salad.
- Serve on its own or with white wine, sparkling apple juice, cranberry juice or for carb junkies with fresh soy and linseed bread.

Final Comments
Use any lemony dressing you like. I mixed one part lemon with two parts oil. I added dried sage and thyme, lots of mustard powder, salt and pepper and a tiny bit of sugar. It was quite nice. Some people might prefer a red wine or balsamic vinegar.
