    Healthy Burghul Salad

    List of Ingredients


    • 1 cup burghul, soaked in 3 cups hot water
    • 1/4 cup LSA (that's linseeds, sunflower seeds and almonds all ground)
    • 1 tin corn, drained (or use fresh corn)
    • 1/4-1/2 cup fresh parsley (other herbs can be added if you like, eg thyme, oregano or mint)
    • 5 dried apricots, chopped finely
    • 3 tbs slivered almonds and pinenuts (if you can't get the mix either will do or hazelnuts)
    • 2-3 tomatoes, chopped finely
    • 1/2 stick celery, finely diced
    • 1/4 red onion, finely chopped
    • 1 1/2 limes (juice of)
    • olive oil to make 1:! ratio (or more)
    • 1 tsp (or less) sugar (or maple syrup)
    • 1/4-1/2 tsp salt
    • pepper to taste
    • I bunch coriander (cilantro) finely chopped


    Instructions


    1. Mix chopped red onion and coriander with lime juice, oil, salt, sugar, pepper

    2. Check if burghul soft, drain if necessary. Combine with all other ingredients.

    3. Let sit in refrigerator about 1/2 hour for flavours to combine before eating



    Final Comments


    This makes a lovely vegetarian meal by itself or with a dollop of yoghurt or raita. However it can also be served with a small tin of tuna, poached or fried chicken or barbecue meats.
