    Latvian Herring Salad

    Recipe Introduction


    Even though the proper way to make this is with dill pickles, I have made it with fresh cucumber instead and it still tasted good.

    If you are scared of pink leave out the beetroot. It is still not too bad served or rye bread.


    List of Ingredients


    • 250g matjes herrings
    • 1/2 small onion or 2 stalks spring onion.
    • small tub (300g) sour cream
    • 1 granny smith apple
    • 1 bunch beetroot.
    • 2-3 dill pickles
    • chopped dill (optional)


    Instructions


    1. Boil beetroot unti tender. Peel and chop.
    2. Chop herrings, onion, apple (peel it if you like, pickles and dill.
    3. Mix in a bowl. Stir through sour cream and pepper mixing well.
    4. Serve with rye bread and assorted salads, piragi or whatever you like.


    Final Comments


    I haven't tried radishes in this but they would probably work with the other ingredients.
