    Recipe Introduction


    this is one of thise salads that makes a good sandwich filling for lunch or picnics with some baby spinach. It is also good with a selection of salads especially in summer.

    serves 2-4 depending how served


    List of Ingredients


    • Cold roast chicken (1/2)
    • 1 pear cubed
    • 1/2 red onion finely chopped
    • 3 tbs sour cream
    • 1/2 tbs dijon mustard
    • salt and pepper to taste
    • small handful cashews


    Instructions


    1. Mix sour cream with onion and mustard. Add all other ingredients and toss to coat.
    2. If no pears available use crunchy bland vegetable such as celery and add 1 tsp honey and squeeze lemon to the dressing.


    Final Comments


    Serve with rocket on warmed pita bread or as desired
