Recipe Introduction
this is one of thise salads that makes a good sandwich filling for lunch or picnics with some baby spinach. It is also good with a selection of salads especially in summer.
serves 2-4 depending how served
List of Ingredients
- Cold roast chicken (1/2)
- 1 pear cubed
- 1/2 red onion finely chopped
- 3 tbs sour cream
- 1/2 tbs dijon mustard
- salt and pepper to taste
- small handful cashews
Instructions
- Mix sour cream with onion and mustard. Add all other ingredients and toss to coat.
- If no pears available use crunchy bland vegetable such as celery and add 1 tsp honey and squeeze lemon to the dressing.
Final Comments
Serve with rocket on warmed pita bread or as desired
