Marinated Mushroom Salad

Recipe Introduction
serves about 6 or more as one of several salads at a barbecue or cold table. Good side to meats or a great vegetarian option. Very good friends with all manner of green salads and the leftovers keep pretty well
List of Ingredients
- 500g button or cup mushrooms
- 1/2 onion sliced very finely
- 1/2 bayleaf (optional)
- peppercorns (or ground pepper)
- 1-2 cloves garlic (crushed, chopped fine or just leave whole)
- juice of 1 lemon (rind optional)
- olive oil, twice as much as volume of lemon juice
- 1 tsp brown sugar (optional)
- 1/2 tsp dijon mustard (or mustard powder)
- salt to taste
- fresh herbs as available (if you like)
Instructions
- If mushrooms are very small you may like to use them whole or just halve them, otherwise slice them. Miz with onion slices.
- Shake together lemon juice, salt, pepper, oil, mustard, sugar. Add herbs to mushrooms and pour over the dressing.
- Cover and refrigerate overnight.
Final Comments
note - even some kids who think they dont like mushroom (based on cooked) will like this tangy, lemony raw mushroom salad
