    Most Basicest Green Salad Ever

    This is as simple as it gets but a nice accompaniment to casseroles, grills or whenever you feel you need more green on the plate for balance or health.

    List of Ingredients




    small handful of leaves per person (baby spinach, mixed lettuce, for colour some nasturtiums can be added but not too many)

    red wine vinegar (you may use any vinegar you like but red wine is very nice here)

    Macadamia oil (cold pressed - you can use pumpkin seed, hazelnut, walnut or a very very good extra virgin olive if you prefer)

    pinch of salt

    Recipe



    Whisk vinegar oil and salt together in salad bowl. Add leaves and toss to coat. Serve ASAP unless you like them wilted.

    -many variations are possible to jazz it up

    -add fresh herbs of your choice

    -small amount of spring onion or red onion in the dressing

    -a pinch of mustard powder in the dressing

    -pumpkin seeds, pistachios or pomegranate seeds

    -go mad with cucumber, carrot whatever (not so basic salad then)

    -1 finely chopped anchovy

    -use orange or lemon juice instead of vinegar or toss in orange or grapefruit segments

    But it really doesnt need much jazzing. It is a healthy and lightly pleasant side with any meal.
